Pina Colada Cupcakes

Hi BABE readers,

You may or may not know this but my favorite alcoholic drink is Pina Colada's. And today's receipe feature is Pina Colada Cupcakes! 


Pina Colada Cupcakes
recipe from Baked Perfection 




makes 12 cupcakes

1/2 cup butter, softened
2/3 cups sugar
1 egg
1 egg white
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup coconut milk
1/2 cup crushed pineapple in juice

Preheat oven to 350 degrees Fahrenheit.

In a medium bowl combine the flour, baking soda, baking powder, and salt. In a separate mixing bowl, cream the butter and sugar. Beat in the eggs, one at a time. Add the vanilla; mix well. Add the flour mixture to creamed mixture alternately with the coconut milk and pineapple (batter will be thick). Fill paper-lined muffin cups with 1/4 cup of batter. Bake for 25-30 minutes or until a toothpick inserted near the center comes out clean. 

Pina Colada Frosting
recipe by Baked Perfection

1 stick of butter, softened
3 cups powdered sugar
pinch of salt
4 tablespoons pineapple juice
2  1/2 tablespoons coconut milk

Beat butter and salt until creamy.  Add powdered sugar 1 cup at a time alternating with pineapple juice and coconut milk until fully combined.

Justice for Trayvon Martin

Hi BABE readers, 

Zimmerman was found not guilty for the murder of 17 year old Trayvon Martin after a jury of six women acquitted Zimmerman of 2nd degree murder, and his other charge of manslaughter. The verdict illustrated that the jury believed Zimmerman reacted in a manner of self-defense and the reaction was necessary to save his own life against Martin. Martin was unarmed during the time of the event. Had Zimmerman been convicted, he could have faced up to life in prison.

However, the U.S. Department of Justice is now investigating the shooting death of Trayvon Martin and if he gets hit with federal charges, Zimmerman could face jail time, even with the not guilty verdict. The DOJ issued a statement saying they're looking into the evidence, including testimonies from the trial and will look to see if federal prosecutors should file criminal right charges against Zimmerman.

Therefore, Zimmerman may get jail time if they decide to press charges. There is still some hope for Justice.

President Obama releases a statement on George Zimmerman's not-guilty verdict, urging the nation to respect the juries decision:

"The death of Trayvon Martin was a tragedy. Not just for his family, or for any one community, but for America. I know this case has elicited strong passions. And in the wake of the verdict, I know those passions may be running even higher. But we are a nation of laws, and a jury has spoken. I now ask every American to respect the call for calm reflection from two parents who lost their young son. And we do, we should ask ourselves if we're doing all we can to widen the circle of compassion and understanding in our own communities. We should ask ourselves if we're doing all we can stem the tide of gun violence that claims too  many lives across this country on a daily basis. We should ask ourselves, as individuals and as a society, how we can prevent future tragedies like this. As citizens, that's a job for all of us. That's the way to honor Trayvon Martin.”

Paraphrasing President Obama stated violence is not the answer, it will only make things worse. Let's try to stick together as a nation for Justice for Trayvon Martin, the correct way!

Something Old, Something New, Something Borrowed, Something Blue!

Hi BABE Readers,

9 years together with my husband of 6 years, we have finally decided to treat ourselves to a small ceremony. Still not the complete dream wedding but it's something for us to look back and know that we had a great 6 year Anniversary. We plan on celebrating it with our two Best Friends and our daughter. In some way this will also be something for our daughter, she will be able to tell her future siblings "I was there".

Now that you have the back story, I am turning to you all for advise! With less than two months away I am stuck on this wedding tradition that I didn't get to experience at my City Hall wedding. "Something Old, Something New, Something Borrowed, Something Blue". I went searching on "The Knot" and found some great answers but they didn't connect to me. 

The Knot did a great job explaining the meaning behind the Wedding Rhyme:

"This tradition comes from an Old English rhyme ("Something Old, Something New, Something Borrowed, Something Blue, A Sixpence in your Shoe"), and the four objects that the bride adds to her wedding outfit or carries with her on the big day are just good luck charms. Don't stress too much about them -- they are the little tokens of love your mother, sister, other relatives, and attendants will give you at the eleventh hour (although you can give them to yourself, too). Something old represents continuity; something new offers optimism for the future; something borrowed symbolizes borrowed happiness; something blue stands for purity, love, and fidelity; and a sixpence in your shoe is a wish for good fortune and prosperity, although this remains largely a British custom."


My Something Old will be my diamond bracelet my mother purchased for my 18th Birthday.

My Something New will more than likely be my dress, since I cant think of anything else.

My Something Borrowed will be my mothers fresh water pearls (Although I am nervous they don't match my attire.)

My Lovely Maid-of-Honor is planning on surprising me with my "Something Blue". or my Blue ring.

Fourth of July

Hi BABE readers, 




Hope everyone had a wonderful Fourth of July celebration. I surely kept myself busy making goodies, in patriotic colors of course, red, white and blue! Celebrating Birthdays and Americas Independence! I made 30 Cake pops for Independence day in the form of a flag of course! 






I then made 30 cake pops for my niece Adiel's 16th Birthday. Being a Fourth of July baby I made then patriotic as well as personalized. Her name, number 16 and decorating it with my new favorite designed "fine drizzle" and "swiggles" 
Today I made 25 cake pops and cupcakes for my neighbor Jazz Birthday. 
She is also a 4th of July lady!

What is Pinterest?

Pinterest is a pinboard-style photo-sharing website that allows users to create and manage theme-based image collections such as events, interests, and hobbies. Users can browse other pinboards for images, 're-pin' images to their own pinboards, or 'like' photos. 

What is a Pin?
A pin starts with an image or video you add to Pinterest. You can add a pin from a website using the Pin It bookmarklet or upload an image right from your computer. Any pin on Pinterest can be repinned, and all pins link back to their source.

What is a Board?
A board is where you organize your pins by topic. You could pin ideas for remodeling your bathroom to your House Projects board, for example. Boards can be secret or public, and you can invite other people to pin with you on any of your boards.

Hennessy Cake Pops

Hi BABE readers, 

I have been getting so many inquiries in regarding alcohol infused cupcakes and cake pops. So back in February I decides to make Hennessy cake pops in three different flavors vanilla, chocolate and red velvet. Between five women and five males I gathered the below results:

Vanilla - 0%
Chocolate - 40%
Red Velvet - 60%

With this conclusion Red velvet wins when combined with Hennessy. Vanilla was not liked by 80% of the testers as the flavor did not go so well with this specific liquor chose. 

Our next alcohol infused cake pop tasting is scheduled for this July. This time I plan to use Bacardi 151 on all five flavors listed on BABE's site, vanilla, chocolate, red velvet, strawberry and lemon.

Making my transformation

Hi BABE Readers,

Last week I celebrated my one year Anniversary with BABE BY BEKI. During the past year I grew as an individual and a business owner. I am slowly building the foundation for my ultimate dream and I would like to take the time out to thank all my supporters whether being friends or family.


I had a great start with my original host for my website but it wasn't me. Now I have teamed up with K.O.Services and I am over excited about my re-launch to the website. My gallery is more organized. My prices are clear for my customers. I think this was the best move I have made business wise. Thank you Kim for being patient and taking my thoughts into an actual site. 

#XOXOBeki is going to be me giving advise on party ideas, discuss my personal new projects, upcoming New York Events, also style tips for your Wedding, Baby Shower, Anniversary and more. I will share hair styles, nail designs, make up ideas for your special event.
